That Christmas Turkey Recipe – Scrumptious

Is there anything to eclipse the frenetic activity of baking the Christmas turkey?  I can think of very few other events.  Baking the turkey ranks as a big production.  It must be just as “Mama” used to make it, using all her techniques and secret seasonings to make it taste perfect!  This is one recipe I try not to experiment with too much as the results are usually right on point.  Here’s our turkey *preparation and recipe. Give it a try and savor the results.

Ingredients for Turkey (approximately 10-12lbs)

Finely chop the following seasonings and vegetables:

Herb and Veg Seasoning for Turkey Marinate3 medium-sized tomatoes
2 medium-sized onions
7-9 pimentos
7 stalks of celery
Handful of Spanish thyme
3-5 leaves of chadon bene
1/2 turkey ham

Other ingredients

3  – 31/2 lbs of breadcrumbs
2 small eggs
3 limes or lemons
Tabasco sauce to taste
1 tbsp olive oil
Worcestershire sauce
Soy sauce
2 tbsps butter
3 tbsps ketchup

Also required:

5 – 6 skewers
Enough string to tie turkey

Turkey PrepTurkey Prep

(a)  Thoroughly defrost turkey before seasoning
(b) Remove gibblets, clean, chop and season with salt, pepper and dash of soy and/or Worcestershire sauces
(c)  Wash and clean turkey using lime or lemon
(d) Season with salt, pepper and sauces
(e) Refrigerate until ready for stuffing

Stuffing Prep

1)  Warm olive oil in very large saucepan, sauté garlic
2)  Gradually add small portions of onion, tomatoes, ham and seasoned gibblets to saucepan and allow to cook for approximately 3 minutes on medium heat
3)  Add parsley, celery, pimentos and chadon bene. Stir
4) Add remaining ham, onions and tomatoes and allow to simmer
5)  Sprinkle with Tabasco and Worcestershire sauces and allow to simmer
6)  Add olives and capers.  Simmer for approximately 5-10 minutes
7) Remove from heat
8) In large mixing bowl, pour 2 lbs of bread crumbs and gradually stir in contents of saucepan
9)  Add remaining breadcrumbs and stir, keeping mixture moist

 Stuffing the Turkey

1)  Add and compress stuffing into turkey cavity until filled
2)  Skewer the legs together to secure cavity. Tie with string
3)  Add stuffing to other end of turkey
4)  Fold over flap, skewer and tie
5)  Baste turkey with a mixture of butter and ketchup
6)  Place in greased roaster with the breast facing up
7)  Add olive oil and knobs of butter to roaster
8)  Cover.  Cook in pre-heated oven at 350º F allowing 15 minutes baking time per pound
9)  Remove cover for final 15 minutes to get that golden brown color


Caribbean Christmas Turkey Stuffing*  Any extra stuffing can be baked in a greased covered baking dish for a maximum of 15 minutes at 350ºF
*  If stuffing is dry, add beaten eggs mixed with 1/2 teaspoon of lemon juice
*  When the meat has left the bone of the turkey legs, the turkey is cooked
*  Ingredients will vary depending on the weight and any other special requirements
